Rainy Days and Zucchini

Here it is the middle of July, and we're actually having slightly cooler weather and rain.

Both were unexpected and Both appreciated!


 Isn't he cute!  
Just like me ... he's enjoying the Rain
 
 
Now, down to the business of Sharing Recipes 

Remember this from my previous post?


You won't believe what I did with this ONE Zucchini


The first inch or so made this Zucchini Bread


I know...I was surprised too!


I found the recipe on Pinterest


We're trying to eat healthy ... so this seemed like a good choice.
(whole wheat & honey = healthy)   
 
The only thing I added were
Chopped Walnuts
(personal preference)

It's tasty but a little dryer than I would like.
(of course...that may not be the recipes fault...it's probably the cook)

I made this Relish

Another recipe I found on Pinterest


I liked this one because it only called for 1/4 c of sugar
(kinda healthy)
plus it was quick and easy
 

This one has passed the "Buzz" test.
(in case you don't know ... Buzz is my husband)
See that small jar ... well, it's already gone!

So this one gets



I did use some of chili peppers from our garden
but other than that, I followed their recipe.
 

Needless to say
the little birdie and I are enjoying our rainy days

  3. I am loving the weather we have been having here in our area, too. Those zucchini are amazing. We had some huge zucchini one year and it was surprising how many recipes I could find using zucchini. One of my favorites was a chocolate zucchini cake. So moist. Your bread looks fabulous and I bet it was even more delicious than it looks.

  5. I'm glad to hear someone loves the rain! I do, too, I don't have to water the lawn or flowers! :)

    Your bread looks wonderful. Just tweak it next time and add more oil or whatever liquid the recipe called for. I love it warm with a lot of butter! The relish looks good, too!

  7. That is some zucchini, Geneva! I haven't had zucchini bread in ages. Need to make a loaf, I think. Relish sounds interesting too. Cute little birdie who is hanging with you on the porch. Wish we had cooler temps here. xo

  8. Wow Geneva! That zucchini could feed an army...:) Your relish looks so tasty as does the bread. I saw an idea on Pinterest to use long thin slices of zucchini in lasagna instead of noodles. I bet it would be tasty! I took zucchini, sliced them vertically, hollowed them out and placed cheese, tomato, and pepperoni in them for a healthy pizza alternative. I saw an idea to do tacos the same way the other day. I love zucchini!
